I do love Trader Joe’s and his frozen fish fillets. At roughly $6 for 2 sizable fillets, you get 2 full meals worth. The best part is that the frozen fish tastes just as good as the fresh stuff. I’ve heard a lot about how quick freezing food actually preserves its nutrients, so I’m happy to jump on the bandwagon of frozen protein–especially in times of $8/pound chicken breasts.
Anyway, I was so impressed with this honey ginger mahi mahi, which I made only a few weeks ago, I decided to give it another ago.
Served over fluffy couscous alongside boiled edamame tossed with sea salt, it was perfection. Couscous is one of those amazing grains that cooks instantly. Just pour it into boiling water, add your spices and let sit for 5 minutes. Fluff it with a fork and use it as a bed for meat, poultry, fish, or just veggies. I added chopped, fresh mint and cinnamon to the couscous and drizzled the sauce from the fish over the entire plate.
